You should be able to click btw planes and see their paths.  Screen isn’t full window on iPad.  Plane speed while moving around makes it too difficult to time anything close.  Should be able to pause a plane while moving on the ground.  If you click wrong you are stuck with that decision. You can’t change your mind. Just not fun to play as is.
