## What is 江西菜食谱?

赣菜，又称江西菜，被称为“第九大菜系”。 
传统意义上的赣菜主要由南昌、上饶、九江、赣东、赣南五大流派互相渗透并兼纳全省其他各地市土特菜肴而成。随着时间的推移，现今的赣菜主要由豫章菜、浔阳菜、赣南菜、饶帮菜和萍乡菜构成。 
赣菜的主要风味特色是：原汁原味，油厚不腻，口味浓厚，咸鲜兼辣。赣菜不断与天时气候、地理环境、风俗习惯、养生理念等融合，形成了“鲜辣香醇、味和天下”的特色。
