## What is Patanegra?

Il pregiato prosciutto spagnolo è ricavato da neri maiali iberici soprannominati “Patanegra” che si nutrono di dolci ghiande cadute dagli alberi: le bellota, ricche di acido oleico , la stessa sostanza presente nelle olive. E’ un alimento adatto alle diete dove sia necessario controllare il colesterolo poichè il grasso contenuto possiede una composizione simile a quella vegetale.

Il prosciutto non ha assolutamente conservanti nè sostante aromatizzanti e contiene il 50% in più di proteine della carne fresca.
Il gusto si fa strada nel grasso degli animali al punto che gli spagnoli chiamano questi animali “olive con le zampe”.
Il peso che devono raggiungere è di 160 chili e per essere sicuri che ogni maiale mangi la giusta quantità di cibo, non vengono allevati più di due animali per ettaro. Anche la fase della stagionatura è importante, appena pronte le zampe anteriori “Paletas”e quelle posteriori “Jamones” vengono conservate con sale marino dell’Andalusia.
