## What is Sourdough Tracker?

Your starter peaks while you are at work. Or three hours after you gave up waiting.

Peak time is not a fixed schedule. It moves by hours when your kitchen moves by a few degrees, which is why the starter that was ready by lunch in August needs until bedtime in November. A fixed daily alarm will be wrong about it every time the weather turns.

Krumo learns how your starter actually behaves. Log a feed, mark the peak when it domes, and after three marked peaks Krumo fits a curve to your starter and your kitchen. From then on it tells you when the window opens.

WHAT KRUMO DOES

Live starter status. One glance says rising, nearly peaked, at peak, or past it, with the time left before the window.

A curve fitted to your starter. See how many degrees it takes to halve your rise time, measured from your own log rather than assumed.

Reminders that move with the temperature. Two per feed: one shortly before the window opens, one when it does. Both are placed by your starter's own curve at the temperature you logged, so a cold kitchen pushes them later without you touching anything.

Levain timing, backwards. Say when you want to mix. Krumo tells you when to feed and how warm to keep it.

Feeding log. Ratio, temperature, flour and notes for every refresh, with the peak you observed.

Bake log. The formula in baker's percentages, bulk and proof timings, a crumb photo, and how the loaf actually turned out.

A bake card worth posting. Your crumb shot with the hydration, levain, bulk and cold proof already on it. The four things the comments always ask, answered before anyone asks them.

True hydration. Counted with the flour and water your levain brings, which most recipes quietly leave out.

Dough temperature calculator. The water temperature that lands your mix on target, given your flour, your room and your levain.

WHY TEMPERATURE IS THE WHOLE GAME

Fermentation roughly halves in time for every nine degrees Celsius you add. Most starters sit near that number. Yours will not sit exactly on it, and that difference is the gap between an open crumb and a dense one. Krumo measures yours instead of assuming.
