## What is Sustentable?

La guía gastronómica que evalúa por primera vez la sostenibilidad ambiental de la actividad restauradora y el porcentaje de materia prima de proximidad que utilizan los restaurantes. Una guía que ofrece, además, la evolución histórica de la dieta mediterránea desde la perspectiva del Mediterráneo como encrucijada bajo la influencia del comercio con otros territorios y la importancia de la diferenciación y singularidad de dos productos tan nuestros como son el aceite de oliva y el vino, así como otros artículos de interés gastronómico.

Y todo ello, bajo la perspectiva de aspirar a constituirse en una herramienta de información novedosa para contribuir a la lucha contra el cambio climático global.
