## What is Thai Halal?

ฮาลาล (อาหรับ: حلال‎) (บ้างสะกดว่า ฮะลาล หรือ หะลาล) เป็นศัพท์นิติศาสตร์อิสลามจากภาษาอาหรับ หมายความว่า กฎบัญญัติอนุมัติให้มุกัลลัฟ (มุสลิมที่อยู่ในศาสนนิติภาวะ) กระทำได้ อันได้แก่ การนึกคิด วาจา และการกระทำที่ศาสนาได้อนุมัติให้ เช่น การรับประทานเนื้อปศุสัตว์ที่ได้รับการเชือดอย่างถูกต้อง การค้าขายโดยสุจริตวิธี การสมรสกับสตรีตามกฎเกณฑ์ที่ได้ระบุไว้ เป็นต้น
ในเมืองไทย คำว่า “ฮาลาล” เป็นที่รู้จักในความหมาย อาหารหรือสิ่งเจือปนที่ไม่ขัดกับหลักศาสนาอิสลาม อาหารสำเร็จรูปประเภทนี้จะมีตราฮาลาล
ตราฮาลาล คือ ตราที่ติดบนสลากผลิตภัณฑ์อาหาร เพื่อบ่งบอกว่าผลิตภัณฑ์นั้นเป็นที่ฮาลาล (อนุมัติ) สำหรับมุสลิมใช้บริโภค โดยจะมีคำว่า “ฮาลาล” (อาหรับ: حلال‎) เป็นภาษาอาหรับประทับอยู่ ผู้ออกตราฮาลาลในประเทศไทยคือคณะกรรมการกลางอิสลามแห่งประเทศไทย
อาหารฮาลาล คือ อาหารที่ไม่มีสิ่งต้องห้ามเจือปน โดยเฉพาะอย่างยิ่งเนื้อสัตว์นั้นจะต้องเป็นเนื้อฮาลาล และไม่เจือปนสิ่งฮะรอม (Haram) หรือสิ่งต้องห้ามบริโภค เช่น เหล้า หรือไขมันหมู เป็นต้น เนื้อสัตว์ หรือ ผลิตภัณฑ์จากสัตว์ที่ฮาลาล จะเกิดขึ้นก็ต่อเมื่อสัตว์นั้นผ่านการเชือดที่ถูกต้องตามแนวทางอิสลามดังต่อไปนี้
O ผู้เชือดเป็นมุสลิมที่เข้าใจ และรู้วิธีการเชือดแบบอิสลามอย่างแท้จริง
O สัตว์ที่จะนำมาเชือดจะต้องไม่เป็นสัตว์ต้องห้าม เช่น สุกร สัตว์ที่ล่าหรือบริโภคสัตว์     อื่นเป็น  อาหาร เช่น เสือ สุนัข สัตว์ปีกที่ล่าหรือบริโภคสัตว์อื่นเป็นอาหาร เช่น เหยี่ยว นกอินทรี สัตว์เลื้อยคลาน เช่น งู
O สัตว์ยังมีชีวิตขณะทำการเชือด
O การเชือดต้องเริ่มต้น ด้วยการเปล่งคำว่า “บิสมิลลาฮฺ” อันมีความหมายว่า ด้วยพระนามของอัลลอฮฺ
O การเชือดโดยใช้มีดคมตัดเส้นเลือดใหญ่ หลอดลม หลอดอาหาร ที่ลำคอให้ขาดจากกัน เพื่อให้สัตว์ตายโดยไม่ทรมาน
O สัตว์ต้องตายสนิทก่อนที่จะแล่เนื้อ หรือดำเนินการใด ๆ ต่อไป
 
    ชนิดของสัตว์ที่มุสลิมนำมาบริโภคได้ ได้แก่ สัตว์บก เช่น แพะแกะ โค กระบือ กวาง ฯลฯ และสัตว์น้ำจำพวกปลา ปู กุ้ง หอย และสัตว์ทะเลทั้งหมด ส่วนสัตว์ที่ไม่สามารถบริโภค ได้แก่ สุกร สุนัข แลน หมูป่า งู ลิง สัตว์มีกรงเล็บ สัตว์มีพิษหรือสัตว์นำโรค สัตว์ที่ไม่อนุญาตฆ่าตามหลักศาสนาเช่น มด ผึ้ง และนกหัวขวาน สัตว์น่ารังเกียจ สัตว์ที่ไม่เชือดตามหลักศาสนา เลือด รวมทั้งอาหารและเครื่องดื่มที่มีส่วนผสมแอลกอฮอล์ และสัตว์ลักษณะเดียวกับลา
พืชและเครื่องดื่มทุกชนิดที่ไม่มีส่วนผสมของแอลกอฮอล์สามารถบริโภคได้เช่นกัน แต่ถ้าสิ่งดังกล่าวปนเปื้อนด้วยสิ่งสกปรก (นะญิส) ซึ่งหมายถึง สิ่งสกปรกตามหลักศาสนาอิสลาม คือสุนัข สุกร สุรา ซากสัตว์ (สัตว์ไม่ได้เชือดตามหลักการอิสลามยกเว้นปลาและตั๊กแตน) เลือด น้ำเหลือง น้ำหนอง สิ่งขับถ่าย นมลา นมแมว นมสุกรจะกลายเป็นอาหารต้องห้ามทันที
 
ความสำคัญการขอใช้เครื่องหมายรับรองฮาลาล
      มุสลิมมีความศรัทธาว่า “ไม่มีพระเจ้าอื่นใดนอกจากอัลลอฮฺ นบีมุฮัมมัดเป็นผู้สื่อ (รอซูล) ของอัลลอฮฺ” และมุสลิมมีความเชื่ออย่างมั่นใจว่า อัลลอฮฺ คือผู้สร้างมนุษย์และสรรพสิ่งในจักรวาล ดังนั้น คำบัญชาของอัลลอฮฺ (อัล-กุรอาน) คำสอนและแบบอย่างของนบีมุฮัมมัด (ซุนนะห์) จึงเป็นเรื่องที่มุสลิมจะต้องปฏิบัติตามด้วยความจริงใจและจริงจัง กล่าวคือ ปฏิบัติในสิ่งที่อนุมัติ (ฮาลาล) และไม่ปฏิบัติในสิ่งที่เป็นข้อห้าม (ฮารอม) ด้วยความเต็มใจและยินดี
ฮาลาล-ฮารอมในอิสลามจึงมิได้หมายความเพียงการบริโภคอาหารเท่านั้น แต่ครอบคลุมถึงวิถีการดำเนินชีวิตในทุกด้าน เพราะอิสลามคือระบอบแห่งการดำเนินชีวิตของมนุษย์
อาหารฮาลาล (Halal Food) จึงเป็นสิ่งจำเป็นสำหรับมุสลิมในการบริโภค ส่วนผู้ที่มิใช่มุสลิม หากบริโภคอาหารฮาลาลก็จะได้ประโยชน์ต่อสุขภาพเช่นเดียวกันเพราะอาหารฮาลาลจะต้องมีกระบวนการผลิตที่ถูกต้องตามข้อบัญญัติแห่งศาสนาอิสลาม ปราศจากสิ่งต้องห้าม (ฮารอม) และมีคุณค่าทางอาหาร (ตอยยิบ)
