About

Fold to bake crispy bungeoppang, the fish-shaped pastry sold at Korean street stalls on chilly evenings. Fold with a clack, unfold to golden iPhone Duo becomes a cast-iron bungeoppang mold. The two halves of the unfolded screen are the two plates of the mold, and the phone's hinge is the mold's hinge. Pour the batter, add red bean, then fold the phone and the mold clamps shut with a clack. On the outer display the back of the mold glows over the flame while each fish slowly turns golden. When it feels right, unfold the phone: steam bursts out and fresh bungeoppang appear. No buttons, just fold and unfold. It's a game only a foldable phone can play. Trust your eyes and ears At first there's no "done" chime. Watch the colors on the outer display and listen for the sizzle to fade. Open too early and the inside is raw. Open too late and it burns. A chilly evening in a Korean alley Your grandmother baked bungeoppang for 30 years and left you her pair of cast-iron molds. Light up the dark stall at the end of the alley, bake every evening, and become the alley's bungeoppang master. A day at the stall Open at 6 pm, close at 10 pm. Bake in the 4-cavity mold and the fish go to the rack. Customers in line say what they want and buy on their own, each sale a clink of coins and a buzz in your hand. Keep them waiting too long and they walk away. Warm fish piled on the rack draw passersby, and leftovers go at half price at closing. Knowing when to bake one more batch is the art of the stall. Batter makes the shape Too little and you get half a fish. Too much and the overflow bakes into crispy wings. Drips from the kettle leave baked marks, and too much filling bursts out at the edges and burns. Fill wisely, run the stall smartly One spoonful is one fish. Generous filling makes customers happy but cuts your profit, and if the till runs dry, the stall goes bankrupt. Save up for a warming rack, a wind curtain and string lights. Closing report Each day is scored on customer satisfaction, profit and taste. Every fish is graded to two decimal places on color, doneness, filling spread, shape and crispness, and you can break it in half to see inside. Becoming a master Grow the menu from red bean to custard, sweet potato, chocolate, pizza and green tea, sell several at once as the days go by, and clear challenges from Rookie Owner to Legendary Stall. Collect hearts from regulars, who start placing group orders, and compete on the Game Center leaderboard. On iPhones that don't fold, bake the same way with the lid button. Available in Korean, English and Japanese.
