It doesn't work for fullscreen
Probably impossible, but I think the next best thing is probably a siri shortcut... still a shame apple hasn't let safari web player auto landscape regardless of orientation lock.

Doesn’t rotate video
Works great for normal web pages, but doesn’t rotate fullscreen videos.
Better than nothing
It seems safari forces fullscreen mode for vids to be portrait, there is no way around it with the built in fullscreen. This app will let you rotate sideways with the screen lock but even then if you manage to get the fullscreen button to show up in the sideways orientation, it will still auto switch to vertical. As far as I can see the best solution is to use this and hide the bar at the bottom by pressing Aa. Not ideal though.

Update: The developer fixed the issue and now it works perfectly.
Very clever and does the job well, but unfortunately breaks the tap-to-jump-to-the-top-of-the-page gesture. I rely on that enough that I’ve disabled this extension. I would love to use this though.

Doesn't work for fullscreen videos
that's about the only place I would have use for this. Also completely breaks the Twitter page layout, can only see one tweet.
Cool idea…
Unfortunately, it breaks the “tap at the top of the screen to autoscroll back to the top of a webpage” functionality that I’m a big fan of in Safari.
