Verdict
The clearest difference is rating: Glitch at 5.0 against Dolphin Emulator's 2.0. Dolphin Emulator's advantage is ratings volume (196 vs 1) and iOS requirement (13.0 vs 15.1). On price, ads, in-app purchases and monetization model there is nothing between them.

Both are free to download. Glitch sells 1 in-app purchase, starting at $1.99 per month and Dolphin Emulator sells 1 in-app purchase, starting at $2.99 per month. Whichever you choose, the download price is not the number that matters.
Glitch holds the better App Store score, 5.0 against 2.0. That said, the two scores are not equally well evidenced: Dolphin Emulator has 196 ratings behind it against 1, so its average is the more settled of the two.
