KablunTasp is a miller's desk for two old professions where numbers can be found: grinding the millstone and using the malt floor. The cutting surface of the millstone is placed on the Stone Dress table. Each step provides a guideline – the target flour fineness in microns, the stone diameter, the minimum number of grains and the upper limit of the free surface. You set the grains, the pitch of the cuts, the width of the cuts and the free surface, and then check the sanding. The table calculates the cutting blade per revolution and the number of cuts, and then tells you the fineness of the layout, how far you hit and what to change if you missed. The malt flooring table works the same way with grain. The step designates milling moisture, layer depth, minimum germination value and oven temperature. You plan the soaking hours, air breaks, days spent on the floor and on the kiln ramp, and the bench reports the layer moisture, how much the grain changes and what it leaves behind after the kiln. The Stone Dress has sixty-four steps and the Malt Floor has seventy-two, each of which is tighter than the last.
