Colour coding accounts
Colour coding accounts in the All Inbox view is a must. Running multiple accounts with no colour indication is a mess.
So much potential ignored
Email has been around since the beginning of the Internet. And Apple Mail has changed very little over that time. This app gets the basic job done. They’ve added some unsubscribe and anti-pixel tracking features (to keep advertisers frustrated), other than that though it hasn’t added much else.
The spam filtering is hit or miss. Smart mailboxes that you setup on macOS do not sync to iOS or iPadOS. Folder (mailbox) configurations don’t sync either - so you’re forced to organize your folders constantly.
When I see products like Hey and how they’re trying to innovate and rethink the problem of email I wish Apple did more themselves. All the ML technology in iOS devices and it’s not used for their Mail app in ways that make my life better. So there’s a lot to be desired here - uncreative.

Too simple. Not inspired.
Apple Mail is too simple. It lacks many of the features that other mail clients have become excellent at. In order for Apple Mail to play with the big boys, they need to add profile photos, snooze, a better UI, colour customization, smart filters, and more. Apple Mail could be the best, but for now, it feels bland and uninspired.

Listen, there aren’t better alternatives… and that’s a problem
Apple’s Mail app is clearly an important app, existing in some form since the first iPhone. What is amazing about this app is how it is a “dumb” app, where it doesn’t attempt to read your emails and then target you with ads based on your content. Gmail, Outlook, Spark, Newton Mail, etc. all have horrendous privacy policies. That is unacceptable, and keeps me using this app.
However Apple, you’re falling far behind. We desperately need the ability to snooze emails for a later time. Imagine the Mail app linking with the Reminders app to give you a reminder after the snooze was over!
We also need you to finally work with Gmail and get push email set up.
Finally, we desperately need better signature support. For work I need full rich text as my signature, with a photo. I can do it in outlook and other services, but no on my iOS device. It is disappointing and loses the continuity I am hoping for.
So you get three stars for being privacy focused, but no more until we begin to have feature parity.

Brutally incomplete for modern mail
I have a very hard time believing anyone at Apple uses their own mail app. These are just a few gripes that most other apps have figured out:
-No schedule send
-VERY poor attachment management (always defaults to a photo or visible PDF)
-No attachment results in search
-Poor hiding of past quoted emails
-Poor dark mode rendering, especially from Google
-No default font management, frequently adopts the Times New Roman from a sender
-Poor text wrapping in certain emails, displaying super zoomed out message
-No avatars or contact photos on mobile

Needs a lot of improvement
It is a decent app for email, but just feels dated compared to 3rd party apps. There is no snooze, which I feel is crucial for an email app in 2021. GMail has no push notifications, I feel this should be something Apple can address, they have all my information in iCloud already encrypted, I don’t care if they store my Gmail credentials to pull emails, all 3rd party apps do it and who knows how they value your privacy. A lot of bugs as well fetching mail, so hopefully they keep cleaning bugs and improving it.
I was also having issues with my Outlook email account so I had to download the Outlook app to use it. Had not needed to do so until a month ago, so maybe it is something Microsoft or Apple broke recently.

Problems with Microsoft Outlook sand IOS 15
Apple Mail worked perfectly with Outloook until I downloaded IOS 15. I could not open any emails. I restarted my iPad twice and that didn’t correct this problem. I deleted Apple Mail and downloaded that App twice and I still could not open my emails on Apple Mail. The Apple App kept stating that I already was using my current Outlook email address and asked if I wanted to set up another email address in AOL, Yahoo, and Outlook!! I didn’t want to delete Outlook and reload it for fear that I would lose my contacts and my mailboxes. I can’t wait until Apple or Outlook revises their Apps until IOS 15 is compatible with Apple Mail or Outlook. I’ve switched to Edison Mail and it works well.
